GELLI FELIN ARTISAN BREAD FLOUR is a premium product. We make no compromise. We refuse to include harmful pesticides, and we havenโt simply swapped gluten for any number of Ultra Processed ingredients. We have carefully blended a selection of Ancient Grains and Starches to deliver fabulous flavour and texture. In fact the recipe mirrors that of the earliest bread that has ever been found โ thatโs 14,000 years old. It also comes with health benefits and hugely welcome convenience. It is nutrient dense, it has a low GI and being free of Gluten, it needs no kneading!
This packet will make a loaf of approx 1.2 kilos. Itโs huge! Give it a chance and it will keep for ages, providing your daily bread for up to a week or making great toast. Or try 3 standard small loaves. 2 for the freezer.
Directions: Simply combine the flour with 750ml of warm water, working quickly to mix thoroughly then leave it to hydrate for 5 minutes. It can be mixed some more if required. Next transfer the dough into a lightly oiled container, smooth by hand with a sprinkle of water and cover to retain moisture. Leave in a warm place to prove. After one hour. It will have expanded, so shape the dough, perhaps using a banneton, cover and leave for another hour. It should double in size.
Preheat the oven to 260ยบC. Make a shallow cut across the top crust. And bake for 30mins over steam. After 30mins remove steam. Lower oven temp to 220ยบC and cook for a further hour. Leave it to cool.

What do you get if you cross a lifelong celiac, who had struggled/ maybe even given up trying to find a truly satisfying gluten-free bread, and a passionate home chef, always perfecting the latest recipe..?
You get what we thought was a good place to start. We believed there had to be a better way than relying on Commercial Gluten-Free breads, always a disappointment, and full of ultra-processed starches, gums, and additivesโingredients that have no place in real food. So, with a commitment to traditional baking and natural ingredients, we began experimenting, blending Ancient Grains and Starches – attempting to develop the best bread flour we could imagine. Over time, loaf after loaf, and tweak after tweak, the recipe was refined. We shared it with friends and family and the response was astonishing. Not only did they love itโthey couldnโt believe it was gluten-free. Our blend of Organic Gluten Free Artisan Bread Flours and Starches seemed to have hit the spot. It began to take on a life of its own. Turns out tho’ that we weren’t the first to discover the secret..
Archaeologists in Jordan recently discovered the charred remains of bread scattered around a paleolithic hearth. Long before the rise of agriculture, 10-14,000 years ago, Natufian hunter-gatherers, used wild grains and starches to create a simple yet nourishing bread, very similar to our blend!
Without realizing it, our journey had brought us full circleโback to one of humanityโs first true foods.
