What do you get if you cross a lifelong celiac, who had struggled/ maybe even given up trying, to find a truly satisfying gluten-free bread, and a passionate home chef, always perfecting the latest recipe..?
You get what we thought was a good place to start.
We believed there had to be a better way than relying on Commercial Gluten-Free breads, always a disappointment, and full of ultra-processed starches, gums, and additives—ingredients that have no place in real food. So, with a commitment to traditional baking and natural ingredients, we began experimenting, blending Ancient Grains and Starches – attempting to develop the best bread flour we could imagine. Over time, loaf after loaf, and tweak after tweak, the recipe was refined.
We shared it with friends and family and the response was astonishing. Not only did they love it—they couldn’t believe it was gluten-free. Our blend of Organic Gluten Free Artisan Bread Flours and Starches seemed to have hit the spot. It began to take on a life of its own. Archaeologists in Jordan recently discovered the charred remains of bread scattered around a paleolithic hearth. Long before the rise of agriculture, 10-14,000 years ago, Natufian hunter-gatherers, used wild grains and starches to create a simple yet nourishing bread, very similar to our blend!
